Winner winner chicken dinner

What are you making for dinner tonight?

Me? Well tonight I am going rouge and making what I feel like making in the moment instead of what is on my meal plan for the day.

Do you ever do that? I do. I have a hard time sticking with the meal plan, because some days I just don't feel like eating the meal I've planned, and since I am the one making the dinner, I get to choose the meal. :)

So tonight it's roasted chicken.

It was easy. It looked pretty. It impressed my family.

AND EVERYONE ATE THEIR DINNER WITHOUT COMPLAINING!!!

I'd say that is a WIN!

Here's how I did it:

  • 1 fresh whole chicken
  • fresh rosemary
  • 1 whole chopped onion (you can also throw in some garlic)
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 3 sliced lemons

In a shallow baking dish stuff you chicken with rosemary, onions, garlic, a few slices of lemon.

Mix together wine and broth, and pour it over the chicken. Drizzle olive oil over the chicken. Salt and pepper the chicken. Add remaining onions, lemon, and rosemary to the top and all around the chicken. Bake at 350 covered for 1 hour. Remove cover and continue baking for 45 minutes. Check the temperature of your chicken and right before it's finished broil it for 5 minutes to get the outside crispy.

I served mine with some sauteed spinach and rice. Enjoy!
