Allergy friendly, toddler approved Apple Cinnamon Muffins

The list is so long it is easier to just say what he can eat than what he can't. His pediatrician said he has never seen a kid like this in 30+ years of practice :) LOVELY!muffin1Anaphylaxis to milk protein (you can read about our experience HERE)Allergic to:PeanutsPeasSoyGlutenSunflower SeedsEggsBeansSo needless to say we DON'T eat out with this kid as the risk is too great. I am always looking and trying new recipes to keep his diet interesting, but it is HARD! Especially baking!These muffins just happened one morning, and even my girls who can eat anything liked them! Dairy, Soy, Gluten, Egg, and Nut FREE Apple Cinnamon Muffins1-2/3 cups rice flourmenu42-1/2 teaspoons baking powder2 tablespoons sugar1/2 teaspoon salt1 teaspoon egg -replacer beaten in 2 tablespoons of warm watermenu21 cup apple sauce1/4 cup water4 tablespoons olive oil2 teaspoons cinnamonMix your egg replacer 1st then add remaining wet ingredients. In a separate bowl mix dry ingredients. Fold wet ingredients into dry and mix with a wooden spoon.Spoon mixture into mini muffin pan oiled with olive oil.Sprinkle each muffin with cinnamon and sugar.Bake at 400 for 20 minutes.ENJOY!
