What are you making for dinner tonight? Me? Well tonight I am going rouge and making what I feel like making in the moment instead of what is on my meal plan for the day. Do you ever do that? I do. I have a hard time sticking with the meal plan, because some days I just don't feel like eating the meal I've planned, and since I am the one making the dinner, I get to choose the meal. :) So tonight it's roasted chicken. It was easy. It looked pretty. It impressed my family. AND EVERYONE ATE THEIR DINNER . . .

With a kiddo who has multiple server food allergies (he cannot eat out at restaurants, only food I make for him), I am always looking for a new recipes and ideas to make him special treats. I tweaked my banana bread recipe to make these great "donuts" that even his sisters who know what the "real thing" tastes like.....LOVE! I used this great pan from amazon. 2-3 ripe smashed bananas 1/3 cup avocado oil 1 egg substitute 1 cup sugar 1 teaspoon vanilla 1.5 cups of Gluten free flour . . .
We are working on eating healthier around here in this new year, and so that means finding another option for Bisquick pancakes on Saturday morning. These are YUMMY and work for a Paleo diet as well. For 3-4 pancakes..... Mix together 1 unripe banana 2 eggs 1/2 teaspoon vanilla extract dash or two of cinnamon I used an electric blender to get the banana totally mashed. Throw them in a non stick pan and fry them up! Add your favorite fruit as a topping with raw honey instead of syrup . . .

We hosted Easter this year, and I had such a great time planning the menu. Many of the dishes you can use as a main dish and just add a few veggies and sides. Everything was of course dairy free, but you can substitute real butter or milk for anything I used. Honey Glazed Ham Spinach Quiche Mac and Cheese I use this brand of cheese substitute.
