If you have been following this blog for any amount of time, you know my sweet son Wit is allergic to EVERYTHING! Food that is. The list is so long it is easier to just say what he can eat than what he can’t. His pediatrician said he has never seen a kid like this in 30+ years of practice 🙂 LOVELY!

Allergic to:
Peanuts
Peas
Soy
Gluten
Sunflower Seeds
Eggs
Beans
So needless to say we DON’T eat out with this kid as the risk is too great. I am always looking and trying new recipes to keep his diet interesting, but it is HARD! Especially baking!
These muffins just happened one morning, and even my girls who can eat anything liked them!
Dairy, Soy, Gluten, Egg, and Nut FREE Apple Cinnamon Muffins
1-2/3 cups rice flour
2-1/2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon egg -replacer beaten in 2 tablespoons of warm water
1 cup apple sauce
1/4 cup water
4 tablespoons olive oil
2 teaspoons cinnamon
Mix your egg replacer 1st then add remaining wet ingredients. In a separate bowl mix dry ingredients. Fold wet ingredients into dry and mix with a wooden spoon.
Spoon mixture into mini muffin pan oiled with olive oil.
Sprinkle each muffin with cinnamon and sugar.
Bake at 400 for 20 minutes.
